Viticulture

Facing north-east on a gentle slope, this single plot has been entirely planted with grass, a deliberate choice to preserve the balance of the soil and encourage biodiversity.

Vinification

Direct pressing after chilling, with no sulfur added during vinification.
Vinification in concrete eggs on fine lees with a 2-month fermentation at 16°C.

2023

2023 was a vintage with ample sunshine. Both spring and summer were extremely hot, resulting in an early harvest at the end of August. The grapes reached optimal ripeness, showcasing a remarkable concentration of fruit.
